How to make the crispiest Italian oven baked potatoes. These golden, crunchy roasted potatoes with rosemary, Parmigiano, and olive oil are the perfect Italian side dish for Sunday dinners, family meals, and gatherings, and they’re great for the holidays too. Ingredients:

3 lbs Yukon Gold potatoes

1/2 cup grated Parmigiano Reggiano

1/2 cup breadcrumbs

Olive oil

Fresh rosemary

Salt & black pepper, to taste


Instructions:

1. Preheat your oven to 400°F (200°C) and line two baking trays with parchment paper.

2. Cut the potatoes into wedges and boil for about 6 minutes until just barely tender. Drain well.

3. In a large bowl, toss the potatoes with olive oil, salt, pepper, rosemary, breadcrumbs, and Parmigiano until evenly coated.
